Caramel-Dark Chocolate Truffles with Fleur de Sel!

My roomie recently made these truffles and OH MY! are they are delicious. They are relatively easy to make but can cause a bit of a mess (chocolate everywhere!).  None the less I would reccommend them to anyone and everyone.  – Recipe Below

  • 20 ounces bittersweet or semisweet chocolate, finely chopped, divided
  • 1/3 cup sugar
  • 2 tablespoons water
  • 2/3 cup whipping cream
  • 1/4 teaspoon fleur de sel 1/2 cup unsweetened cocoa powder
  • Additional fleur de sel
